A mountain's living breath
In southern France, the collapse of a portion of the Combalou plateau millions of years ago created a geological anomaly that is central to a world-famous cheese. The event riddled the rock with a network of fissures and caves that run approximately 2 kilometers long and 300 meters wide. These fissures, known locally as fleurines, are a natural ventilation system. They draw in air from the outside, circulating it through the deep cellars and maintaining a constant cool temperature of around 10°C and very high humidity. This unique, naturally regulated microclimate is the only place where the fungus Penicillium roqueforti can mature a cheese worthy of the name Roquefort.
Penicillium roqueforti is the fungus responsible for the cheese's characteristic blue-green veins and sharp flavor. While other blue cheeses use strains of this mold, EU law dictates that only cheese aged in the Combalou caves may be called Roquefort. Traditionally, the mold spores were cultivated on rye bread left inside the caves. Producers today carefully select and cultivate their own strains to ensure consistency. The fungus performs its work as the cheese ages, breaking down proteins and fats through lipolysis. This metabolic process creates the molecular compounds that give the final product its aroma and taste.
From royal decree to protected status
The history of Roquefort cheese is defined by both legend and law. A popular tale speaks of a shepherd who, distracted by a beautiful girl, left his lunch of ewe's milk cheese and rye bread in a cave, only to return months later to find it veined with mold. Historically, Pliny the Elder may have referred to an ancestor of Roquefort in 79 AD.
The cheese's official status was established on June 4, 1411, when King Charles VI of France granted the people of Roquefort-sur-Soulzon a monopoly on the ripening of the cheese. This royal charter was one of the earliest examples of legal protection for a regional food product. In the modern era, this protection was formalized on July 26, 1925, when Roquefort became the first cheese to receive France's Appellation d'Origine Contrôlée (AOC). This was later elevated to a European Protected Designation of Origin (PDO) in 1996.
The production process is strictly defined. The cheese must be made from the raw, whole milk of the Lacaune breed of sheep. After the curds are formed, they are inoculated with P. roqueforti spores and placed into molds. The wheels are then pierced with needles, creating channels that allow oxygen to enter and the mold to grow. The initial aging period of at least 14 days happens on oak shelves inside the caves. The total maturation time is a minimum of 90 days. A typical wheel weighs between 2.5 and 3 kilograms.
