A natural hydrodynamic engine
The Orbetello Lagoon, covering 27 square kilometers on the Tuscan coast, functions as a highly efficient, natural aquaculture system. Its sustainability results from its unique geography. The lagoon is a body of brackish water shielded from the Tyrrhenian Sea by two long, sandy tombolos, or sandbars, connecting the mainland to the Monte Argentario promontory. This configuration creates two distinct basins, Levante to the east and Ponente to the west.
Three artificial channels cut through these barriers, connecting the lagoon to the sea. This connection is important to the system's longevity. Tidal exchanges through these channels create a constant, slow circulation of water. Hydrodynamic models confirm that this natural flushing prevents the eutrophication, a destructive excess of nutrients, that often leads to oxygen depletion and ecological collapse in other coastal lagoons and modern fish farms. While the natural tidal flow is the primary driver, pumps are sometimes activated in the channels during spring and summer to increase the water exchange.
This constant renewal of water has maintained a stable environment for millennia, allowing for continuous fish harvesting since at least the Roman era. The average depth of the lagoon is only about one meter, which allows sunlight to penetrate and support the ecosystem.
Ancient engineering, modern harvest
The fishing methods used today are a direct evolution of ancient Roman techniques. The core technology is the lavoriero, a complex, labyrinth-like fish trap made of a series of chambers. These barriers are strategically placed in the channels that connect the lagoon to the sea. The system is passive and relies entirely on the natural migratory instincts of the fish and the movement of the tides.
As the high tide pushes seawater into the lagoon, it attracts juvenile fish who enter to feed and grow in the nutrient-rich waters. When these fish mature, their instinct is to return to the open sea to spawn. As they swim out with the tide, the lavoriero funnels them into a series of "deceptive chambers" that lead to a final capture chamber. This method is inherently sustainable; the design allows fishermen to select fish by size, releasing smaller, sexually immature individuals back into the lagoon to grow or out to sea to reproduce.
The main species harvested this way include European sea bass (Dicentrarchus labrax), gilt-head bream (Sparus aurata), European eel (Anguilla anguilla), and several species of grey mullet (Mugilidae). A prized local delicacy, bottarga di Orbetello, is produced by salting and curing the roe of the grey mullet (Mugil cephalus). This product, sometimes called "the gold of the lagoon," has been made here for centuries.
