Topography as destiny
The exceptional quality of Cheongsong's apples is a direct result of its geography. The town sits in a basin at an altitude of over 250 meters, surrounded by the high peaks of the Taebaek mountain range. This topography creates a distinct microclimate driven by atmospheric physics. During the day, the sun warms the basin and the surrounding slopes. After sunset, the air on the mountain slopes cools rapidly, becoming denser. Gravity pulls this cold, dense air downhill into the basin, a process known as cold air drainage or katabatic wind.
This nightly influx of cold air becomes trapped, displacing the warmer, lighter air and forming a temperature inversion. This phenomenon leads to a significant diurnal temperature range—the difference between the daytime high and nighttime low—which averages 13.4°C. This large temperature swing is the primary mechanism behind the apples' superior taste and texture. The warm, sunny days allow the apple trees (Malus domestica) to maximize sugar production through photosynthesis. The cool nights then reduce the fruit's metabolic rate, forcing it to burn less of that stored sugar for energy. This process results in apples with dense flesh and high sugar content that has made Cheongsong the country's most favored apple brand.
The geological recipe
The ground beneath the orchards also is important. The entire Cheongsong region is a UNESCO Global Geopark, a designation showing its complex geological history. The area is part of the Gyeongsang Basin and contains a mix of Precambrian metamorphic rocks and Mesozoic volcanic and sedimentary rocks. The soil is derived largely from rhyolitic volcanic rocks, which are naturally high in silica. This parent material weathers into well-drained, mineral-rich soil, an ideal substrate for apple cultivation, which prefers a soil pH between 5.5 and 6.5.
This unique geology also produces a local stone called spherulitic rhyolite, or "Flower Stone." It formed when hot, silica-rich lava cooled in a way that created spherical layers of dark and light minerals, resulting in patterns that resemble flowers. While not directly in the orchard soil, it shows the area's unusual geological composition. The combination of this specific geology and the topographically-induced microclimate makes Cheongsong a near-perfect natural factory for high-quality apples, producing around 66,000 tons per year.
