An extreme terroir
The Calchaquí Valleys in Argentina's Salta province contain some of the highest commercial vineyards on Earth, with plantings between 1,700 and 3,111 meters (5,500 to 10,206 feet) above sea level. This elevation creates a unique viticultural environment defined by extreme conditions. The region receives over 300 days of sunshine annually, and the thin atmosphere increases solar radiation. The soils are typically sandy and well-draining, with low organic matter, forcing vine roots to dig deep for nutrients.
A feature of this terroir is its massive diurnal temperature variation. Daytime summer temperatures can reach 38°C (100°F), while nighttime temperatures can drop to 12°C (55°F), a swing of more than 20°C. This drop in temperature slows the grapes' respiration process overnight, preserving natural acidity. The climate is arid, with annual rainfall often less than 250mm (10 inches), which minimizes the risk of fungal diseases. The main grape varieties grown here are Malbec, Cabernet Sauvignon, Tannat, and the aromatic white grape Torrontés Riojano, a variety for which Salta is particularly known.
The chemistry of solar stress
The intense ultraviolet (UV) radiation at high altitudes is a form of abiotic stress for the grapevines (Vitis vinifera). To protect themselves, the grapes adapt by developing thicker skins. This physiological response is linked to an increased production of phenolic compounds, particularly flavonoids like anthocyanins and flavonols. These compounds act as a natural sunscreen for the grape, absorbing harmful UV rays and preventing damage to the berry's cells and DNA.
This protective mechanism has a direct impact on the resulting wine. Anthocyanins are responsible for the deep, intense color of red wines made from grapes like Malbec and Tannat. Flavonols and other phenolics contribute to the wine's bitterness, astringency, and mouthfeel. Studies have shown that UV exposure can increase the concentration of specific compounds, such as resveratrol and certain glucosides, which are valued for their antioxidant properties. The high concentration of these UV-induced compounds gives Calchaquí Valley wines their characteristic structure, color, and aromatic complexity.
